Dijon Crusted Salmon

I ran out of chicken last week so I decided to try some salmon recipes before spring break. I decided to try out a recipe I’ve heard of a few times. It turned out great and I ended up having it 3 times last week… mainly cause I didn’t want to have to buy any new ingredients for a different recipe before break. I’m too lazy. Anyways, here’s the recipe for what I used. I only made enough for one serving so multiply by however many servings you’ll want to cook.ImageIngredients:
-1 salmon filet
-1 tbs dijon mustard
-a small handful of my home made croutons (or Italian bread crumbs). -1/2 tbs EVOO
-salt and pepper to tasteImage
Preheat the oven to 350. Brush the salmon with the dijon. Mix the salt, pepper, croutons, and EVOO together. Sprinkle the crumbs over the salmon. Making sure they stick to the dijon on the salmon. Bake for 25 to 30 minutes.Image
I paired it with some cheesy steamed broccoli and another night I had it with some parmesan crusted asparagus. ENJOY!
